Wine Stoppers

Wine doesn't go off because the bottle is open. It goes off because of the air in it. A good stopper slows that down, and the right one depends on what is left in the bottle.

For a red you will finish tomorrow, a Royal stopper seals airtight with food-grade neoprene, and its weighted shape means the bottle can even lie on its side without dripping. To keep a bottle longer, a vacuum pump draws the air back out, while the Cork Pops Wine Preserver lays a blanket of food-safe inert gas over the wine instead. For sparkling wine, the champagne recorker clamps under the rim and holds the pressure in. And the adjustable stopper expands to fit the odd-sized neck nothing else seals.

Questions

Which wine stopper keeps wine longest?

Taking the air out does more than sealing it in. A vacuum pump or the inert-gas preserver keeps an opened bottle closer to how it tasted on the first night than a plain stopper does.

Can you use a regular stopper on champagne?

No. Sparkling wine is under pressure, so it needs a stopper that locks under the rim, like the champagne recorker, to hold the bubbles in.

Can a stoppered bottle lie on its side?

With the Royal stoppers, yes. Their shape and weight guide them into a tight fit, and bottles can be stored on their sides without drips.
