Search for an "air pressure wine opener" and you'll find forum threads, a barbecue supply store and a lot of confusion about what's actually inside the cartridge. Here's how these openers really work, why they treat corks so differently, and where they fall short.
The short version
A needle goes through the cork. A small, measured amount of gas is released underneath it. The pressure lifts the cork out of the neck. Nothing screws into the cork and nothing pulls on it.
That single difference — pushing from below instead of pulling from above — is the reason these openers behave the way they do.
First, a correction: it isn't air
The category is universally called "air pressure", and that's the term everyone searches, so it's the one we've used. But it's not accurate, and the difference matters.
Compressed air is roughly 21% oxygen, and oxygen is what turns wine to vinegar. Pumping air into a bottle you're about to drink would be a poor idea.
What's actually in the cartridge is food-safe inert gas. Inert means it doesn't react — it won't oxidise the wine, it won't change the flavour, and it doesn't dissolve into the liquid in any meaningful quantity in the second or two it's in contact.
This is not an exotic idea. Wineries blanket tanks and barrels with inert gas for exactly the same reason: to keep oxygen away from wine. A gas opener is using a well-established principle in miniature.
What happens, step by step
- The foil comes off. On the Cork Pops Legacy there's a four-blade cutter built into the cap, so you twist it over the top first.
- The needle goes through the cork. Straight down through the centre, all the way through — the tip has to emerge underneath. This is the step people get wrong.
- You press once. A valve releases a metered dose of gas down the hollow needle and into the tiny gap between cork and wine.
- The cork rises. Pressure below is now higher than atmospheric pressure above, so the cork travels up the neck. On a normal bottle it takes a second or two.
- You lift it off. The cork comes away on the needle, and a small ejector pushes it clear.
Why the cork comes out whole
Every screw-based opener has the same fundamental problem: it has to grip the cork hard enough to drag it against the glass it's wedged into. All that force is concentrated in the few threads biting the cork's core.
On a fresh cork that's fine. On a cork that's ten years old and dried out, the material can no longer take the load, and it shears — which is why old bottles are where corkscrews fail.
A gas opener applies gentle, even pressure across the entire underside of the cork. Nothing is gripping it, so there's nothing to tear. The cork moves as a single piece because nothing is trying to pull it apart.
It's the difference between pulling a plug out by its edge and pushing it out from behind.
What these openers can't do
Being straight about the limits, because the forum threads rarely are.
Screw caps
Obviously, but worth saying. There's no cork to lift. A cap remover is the tool for that, and it's a separate purchase.
Corks already pushed into the bottle
If a previous opener has driven the cork down into the wine, gas won't retrieve it — there's no seal left to push against. That's a job for a cork retriever, or for pouring carefully through a strainer.
Very short or very deep corks
The needle has to pass completely through. Most standard corks are 38–54mm and well within range, but some premium producers use extra-long corks that can defeat a shorter needle.
Sparkling wine
Never. A champagne cork is already under several atmospheres of pressure. Adding more is genuinely dangerous. Sparkling wine is opened by hand, slowly, with a thumb on the cork.
"It's not working" — the four usual causes
This comes up often enough that it's worth its own section.
The needle isn't all the way through
By far the most common. If the tip hasn't cleared the bottom of the cork, the gas has nowhere to go and nothing happens. Push down further than feels necessary.
The cartridge is empty
One cartridge does roughly 60–80 bottles. There's no gauge, so the first sign is usually a bottle that opens slowly, then one that doesn't. Refills come two to a pack and take a few seconds to change.
The cork is unusually tight
Some corks, particularly in newer bottles from certain producers, are compressed harder. Give it a second press. It'll move.
The needle is blocked
Cork dust can occasionally clog the tip. A replacement needle is inexpensive, and on Cork Pops models it's user-replaceable rather than a reason to bin the opener.

Is the gas safe?
Yes, and it's a fair thing to ask.
The cartridges hold food-safe inert gas at low pressure. It doesn't react with wine, doesn't change how it tastes, and the volume involved is very small — enough to shift a cork a few centimetres, no more. The same class of gas is used throughout winemaking to protect wine from oxygen.
The cartridges themselves are sealed and stable at room temperature. Keep them out of direct heat, as you would any pressurised container, and don't puncture them deliberately.
